In 1996 a young 16 year girl took her first job working in a cafe in city centre of Galway. Little did she know then, while humming along in the wash up to ‘Killing me softly’, that one day she would return to carry on the tradition of serving the good people of Galway and Ireland.

Gill, a Galway girl, got her training under way in GMIT, getting a degree in Business and Hotel Management. She later moved to Edinburgh and made her fist stab at owning a business setting up the Orchard Bar which is still going strong nearly 10 years later.

Gill returned to Ireland and, after some time planning and searching, she set up the famous 37 West in Newcastle. 37 West was launched in 2013 and became famous for 2 things – the words ‘healthy is the New Sexy’ and the internationally famous and winner of many to titles the Chicken Melt.

2 years later, with people spilling out the doors of 37 West and requests everyday for a city centre location, Gill decided it was time to move into the city. When the deal arose for Lynch’s she jumped at it.

May 2015 saw the day 56 Central was born in the heart of Galway.

Tell us a bit about your business and what you can offer your customers?

56 Central was created with 1 main thing in mind – HAPPINESS. The stylish world above the streets has, over the years, been a place of joy, content and positive vibes, hence the tagline #ourhappyplace. Fun and laughter radiates the walls of 56 Central. It is a place for everyone, families, friends and old acquaintances, to catch up and enjoy each other’s company. Don’t forget that happiness is contagious so spread the joy!

We offer freshly prepared food, luscious salads, a modern sandwich menu with exclusive melt menu, seriously tasty burgers, fresh fish and chips and so much more. Coffee is something we are passionate about and offer extensive iced coffee and hot chocolate range. We serve beers, Guinness and wine direct from the wine vault!

We cater for large groups for lunch or dinner. With 130 seats spread over 3 rooms and a rooftop garden we have plenty of space for large parties.

What is the most rewarding part about the work you do?

We meet some amazing people every day and over the years we have built up a great collection of fantastic customers and crew members, making our lives so much more enjoyable by being surrounded by great people.

We are in a position where we can make an impact and every year we try our best to give back to the community, we love working with the local business community!

What is your goal for 2019? Personal or business related!

We have a busy few months ahead of us, we host our annual Holistic Festival which takes place in September, this year all funds raised are going to our chosen charity Galway Simon Community.

This year the Galway Simon are 40 years in business helping people of Galway , I turned 40 this year, so I am hoping to raise the roof with fundraising and awareness, homelessness is an issue which now impacts everyone.
